You guys.  My husband is not a chicken lover.  At all.  He's always like "Blah...chicken".  Ha, but it's true.  And most people assume when you eat healthy, all you eat is chicken and rice and veggies, right?  I'm always on the hunt for non-chicken meals and AWESOME chicken ones.  

This one is an AWESOME chicken one.  And it's a freezer meal...that most everyone in the family LOVED.  So triple win!

Simply put....

Grab a pound of chicken, a cup of hot sauce, 1/4 cup of lime juice, some garlic and olive oil and stick it all in a freezer bag...stick it in the freezer and call it good.  The day you want to cook it, take it out of the freezer and stick it in the fridge.  Then just throw on the grill and enjoy.

It was NOT too hot at all (I was worried!) and it was the perfect mix and the chicken was not dry at all.  We all LOVED it.

Here was my plate.  1 Red, 1 Yellow and 1 Green.  To simplify things and the clean up - I threw them both on one cookie sheet, drizzled olive oil, threw on some sea salt, black pepper and parsley.


A lot of my friends and folks in the challenge group are always curious when you do clean eating/21 day fix container eating...what do our kids eat?  Well - some nights, we feed them the same thing we are eating and some nights we make our meal and they get microwaved chicken nuggets or fish sticks.  Ha.  But tonight, I thought they would like the chicken.

Top one is Maddie's plate (she hates asparagus and I HATE to waste it because I love it) and bottom is Charlie's plate.

Here was Maddie's (she's two - and never eats dinner.  It's a wonder she still is able to maintain her name of #potroast).  You can see she pretty much ate nothing  - and Charlie threw some asparagus on her plate, because apparently he felt like I gave him too many.

But this was Charlie's plate!  Look at that!  All the chicken GONE!!  And some of the asparagus (minus what he threw on his sister's plate).  So proud.  That kid got dessert!

I'm telling you this - as I'm getting ready to go back to work next week, FREEZER MEALS are my jam and literally the only the way we A) get healthy meals through the week and B) keep me sane because I'm not constantly prepping a ton every week/night/weekend!

This is a great freezer meal and family friendly recipe that I recommend you try.  It was a hit in our house for sure!!
